I love weekends…especially in the summer! Jake and I have a to-do list that we are trying to work through during our time here in the UK, and we are hoping to check another thing or two off of it this weekend! I am still flying high off of some of my good Chicago friends coming this way and hanging out. An incredible trip to Spain, meet-ups at pubs in central London, and a weekend running trails, visiting a winery, and witnessing the Tour de France with some of my favorite people…I miss them all already! I am thinking of writing up a post on our habitudes and adventures…what do you think?
If you are following Habitude Fitness on social media, you saw that I cleaned out the fridge the other day and made a smorgasbord of food with some of the ingredients I had on hand. Veggies don’t last as long here in the UK as they did back home, so we need to eat them up fast. I have noticed that if we don’t, they start to turn fairly quickly. (That’s how it’s supposed to be, right?! I don’t believe spinach is supposed to last for 10 days!) I had some cauliflower, zucchini, bell peppers, and cucumbers that need to be eaten ASAP! I looked up a few recipes from some of my favorite blogs and adapted them to what I had on hand. I must say, it all worked out and everything actually tasted pretty darn good!
I used a brown gluten-free flour in place of the all purpose flour.
I used almond milk in place of the low-fat milk.
I used grass-fed ghee in place of the butter. Check out some interesting information about ghee here!
I did not top with bread crumbs simply because I did not have any on hand.
Coconut Encrusted Zucchini Rounds
If something has coconut in the recipe, I am game! Coconut is on my top 5 favorite foods list for sure!

- Vegetables of choice-I used yellow and red bell peppers, cucumbers, and broccoli sprouts.
- Beans of choice-I used organic black beans, rinsed.
- Seasonings of choice. I used some fresh basil and a dash of Frank's Red Hot!
- Cook quinoa as directed on the package. It is usually 1 part quinoa to 2 parts water.
- Add in your veggies and fixings.

We laughed so hard while trying to capture this mermaid hair flip. My travel buddy Jamie’s core must be stronger than mine because I tumbled around much more than her! So I would say this was a decent workout!
