Strawberry Rhubarb Compote

This compote is delicious over Greek yogurt, oatmeal, granola, ice cream or right off of your spoon!
- 1 pound strawberries washed and dried
- 1 pound rhubarb, leaves removed and stalks washed
- 2 tablespoons honey (you can use agave, sugar, or Stevia as well.)
- 1 tablespoon water
- Slice strawberries into quarters and the rhubarb into 2 inch slices. Place all of your ingredients in a large pot and bring to a boil. Gently simmer until fruit has softened. Remove from heat and start enjoying ASAP!
Try this while the strawberries are in season. The British strawberries are wonderful right now! I had this compote with oats and Greek yogurt this morning!
