Friday morning spin…one of my favorites! It’s a great kick-off to the upcoming weekend. Last Friday I prepared a new recipe for a fitness friend’s birthday that attends my class. Our playlist included Happy Birthday, among a few more of her favorite tunes. We ended the class with a healthy birthday treat. I found myself encouraged after taking the risk of bringing in a new recipe (that I had never even tried myself!) when everyone was requesting the recipe to make on their own! As promised, here is your Quinoa Protein Bars! Enjoy!
Quinoa Protein Bars
1 1/2 cups cooked and cooled quinoa
1/2 cup almond milk
1/2 tablespoon cinnamon
3 tablespoons peanut butter
Maple syrup to taste (Use however much you like, depending on how sweet you’d like the bars to be). Check out why maple syrup is a good choice to sweeten your treats!
In a blender, blend the banana, almond milk, peanut butter, egg, and maple syrup. Add the liquid mix with cinnamon to the quinoa. Put entire mixture in a greased glass or metal baking pan. Bake at 375 for 15-20 min, until the bars are golden brown!
