This 5 minute meal was sent to me by one of my beloved fitness class participants. This takes NO time at all, and is healthy and delicious!

Cassie, I have a healthy recipe for you - we have it about once a week.
  • ⅔ cup quinoa.
  • ½ onion
  • EVOO
  • 1 can of black beans
  • Cilantro
  1. Prepare ⅔ cup quinoa.
  2. Cut up half an onion and cook in a tablespoon of butter or olive oil to soften the onion.
  3. Open a can of black beans and rinse with water.
  4. Add beans to pan with onion.
  5. Cut up however much cilantro you like and add to the beans and onion.
  6. When the beans, onion, and cilantro are warmed, mix with quinoa and serve.
Tip: When I am preparing quinoa, I make it in my rice cooker and it yields enough to work with throughout the week.
